
MARINATED SALMON WITH
MUSTARD SAUCE
Ingredients (for 8 people)
2 fillets of Proa Salmon
one spoonful of sugar
2 spoonfuls of sherry
2 spoonfuls of sea salt
white ground pepper.
Dill
For the sauce:
2 spoonfuls of mustard
1/3 teaspoon of powdered mustard
1/2 egg yolk
1 teaspoon of sugar
1 spoonful of fresh lemon juice
1/2 cup of olive oil

How to...
Mix the sea salt with the sugar, pepper and
dill and spread over the fillets of salmon, rubbing so that it penetrates into the
interior.
Sprinkle the fish with the sherry. Cover the first fillet with the second, head to tail
and with the skin towards the outside. Sprinkle with salt and dill and place onto a plate
and under a heavy board. Allow to marinate in the fridge for two days.
To make the sauce, dissolve in a bowl the powdered mustard with the lemon juice. Add the
other mustard, the egg yolk and the sugar. Work the ingredients while adding the olive oil
very slowly. Add salt and dill.
Free the salmon from the weight, separate the fillets and cut into fine slices with a
sharp knife. Place into a dish and serve with the mustard sauce and brown bread |
